Strawberry Raspberry Coconut Cheesecake

 This month I am a part  of the Lady Behind The Curtain Dessert Challenge for the first time. The rules are very easy: You get two ingredients and have to create a dish that features both of them. On the second Thursday of the month all participating bloggers will post their creation (you can see all other participating dishes at the bottom of this post). This months ingredients were: Raspberries and Strawberries!
As you know by now, I am a cheesecake addict, so I decided to go with a Strawberry Raspberry Coconut Cheesecake.
Filled with strawberries, topped with raspberries, with a creamy coconutty center :) Oh and did I mention the mountain of whipped cream haha.

Strawberry Raspberry Coconut Cheesecake

What you need
The Crust
  • 2 cups Graham cracker crumbs
  • ⅓ cup butter, melted
The Cheesecake
  • 16 oz. cream cheese, fat reduced
  • ⅔ cup sugar
  • 2 teaspoon coconut flour
  • 4 eggs
  • ⅔ cup cream of coconut
  • 2 tablespoons lemon juice
  • 2 cups whole strawberries
  • 1 tablespoon all-purpose flour
Also
  • 2 cups heavy cream
  • 3 cups raspberries
How you make it
  1. Preheat you oven to 350 F
  2. Spray a springform pan with cooking spray*
  3. In a medium bowl combine strawberries and all-purpose flour, set aside
  4. In a large bowl combine cracker crumbs and butter
  5. Press into springform and bake for 10 minutes
  6. Meanwhile in a large bowl combine cream cheese, eggs, sugar, coconut flour, cream of coconut and lemon juice with an electric mixer until smooth
  7. Place strawberry mixture over pre-baked crust, pour cream cheese mixture over it
  8. Bake for 20 minutes, then turn the heat down to 325 F and bake for additional 40-50 minutes (until center is set)
  9. Let cool completely
  10. Beat heavy cream until very stiff (see notes below)
  11. Spread whipped cream over the cake and top with raspberries
  12. Place in fridge for at least one hour before serving

**Notes**
If using frozen berries, thaw first and get rid of all excess liquid.
