Sparkling Water Sheet Cake – 3 Ways



In Germany, this Sparkling Water Cake is the go-to cake recipe for birthday parties! It’s prepared in minutes, baked in less than half an hour and can be decorated however you like it. The cake itself is super fluffy and moist, sweet, but not too sweet and it never fails!
While many people like to only put some lemon icing on it, I have to have chocolate on it haha :) This time I used white chocolate and show you three of my favorite toppings: gummy bears (for the kids), chocolate chunks and coconut flakes – but of course there are a million ways to make it your own :)

What you need
  • The Cake:
  • 1 cup sugar
  • ½ cup coconut palm sugar (or white sugar)
  • 4 eggs
  • 1 cup oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup sparkling water (bubbly water)
  • Decorations:
  • 8 ounces white chocolate chips
  • 3 tablespoons coconut milk
  • 2 cups add-ons of your choice (gummy bears, unsweetened coconut flakes, chocolate chunks, M&M's, sprinkles ... you name it)
How you make it
  1. Preheat your oven to 355 F
  2. Line a 9*13 inch baking pan with parchment paper
  3. In a large bowl whisk together eggs, oil, sugar and coconut sugar until fluffy
  4. Add baking powder and flour, stir until combined
  5. Add sparkling water (watch out, it will foam) and whisk until smooth
  6. Pour batter into baking pan and bake for 25-28 minutes (until toothpick comes out clean)
  7. Let cool completely before decorating
  8. For decorating melt the white chocolate combined with the coconut milk in the microwave, spread on cooled cake and press candy on it.
  9. Place in fridge until chocolate is set.
