Fluffy Eggnog Cake

This Eggnog Cake is so amazingly fluffy, full of flavors and different textures, and topped with some eggnog right before serving simply unbeatable!

Now during Christmastime, I will always have some of that cake in my house.
We literally eat that whenever we want: for breakfast, lunch, nighttime snack or just in between the meals, because it’s so so good.

Since I’m German and we do eggnog only WITH rum, I put some rum extract in it. Feel free tho to just leave that out, if you don’t like the taste.
It’s like always: everything is allowed when you bake it yourself, this is just a basic recipe that you can make your own 😉

Fluffy Eggnog Cake 
Recipe type: Dessert
What you need
  • 1 cup sugar
  • ½ cup butter, softened
  • 3 tablespoons sour cream, fat free
  • ¾ cup eggnog, light
  • 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon brown sugar
  • ½ teaspoon cinnamon
  • ½ cup hazelnuts, chopped
How you make it
  1. Preheat your oven to 350°F
  2. Line a 8 inch baking pan with parchment paper
  3. In a large bowl mix together sugar, butter, sour cream, eggnog, rum, vanilla and egg until fluffy
  4. Add flour, baking powder, baking soda and salt
  5. Mix until just combined (don't overmix)
  6. Pour batter into your baking pan
  7. Combine brown sugar and cinnamon is a mug
  8. Sprinkle sugar/cinnamon mixture over cake batter
  9. Top with nuts and bake for 35-40 minutes
  10. Let cool completely before serving
  11. Right before serving you can pour 1 tablespoon of eggnog over each piece of cake :)
