Eggless Chocolate Peanut Butter Banana Cake

Oh I haven’t posted a cake in a long while. Trust me, I had more than enough cakes in the meantime, just not enough time to post about them :)
This Eggless Chocolate Peanut Butter Banana Cake is one that I have made several times within the last year, simply because it’s so simple, so moist and so delicious!
Basically all you do is throwing the ingredients in one bowl, mix, bake, enjoy … easy enough, right!?

Since the frosting is made of fresh bananas, you won’t be able to store the cake for very long. If I know that I won’t be eating all the cake within the next two days, I only frost half the cake in the beginning and the other half just a couple days later. This way nothing gets wasted :)
Don’t like peanut butter or can’t have peanut butter? Try this recipe with almond butter or cashew butter. I have made it with cashew butter before and am in love with it. As usual with my recipes, there is a lot of room for your very own twist.

Eggless Chocolate Peanut Butter Banana Cake

What you need
For the Cake:
  • 3⁄4 cup margarine, softened
  • 1 cup brown sugar
  • 1 3⁄4 cups mashed bananas
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 3⁄4 cup cocoa
  • 1 1⁄2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3⁄4 teaspoon salt
  • 3⁄4 cup buttermilk milk
For the Frosting:
  • 2-3 large ripe bananas, mashed
  • ⅓ cup peanut butter
How you make it
  1. Preheat oven to 350F
  2. Line a 9*13 form with parchment paper
  3. In a large bowl combine all(!) cake ingredients at once using a whisk of spatula
  4. Pour batter into prepared form and bake for about 40 minutes or until toothpick comes out clean
  5. Let cake cool completely
  6. Warm your peanut butter in the microwave for 20 seconds and combine with mashed bananas
  7. Spread over cooled cake
  8. Enjoy with warm frosting or once it has cooled down
