Tomato Avocado Balsamic Toast

Lunch time is one of my most hated times! There just isn’t enough time for cooking if you work full time like me, or on my days off I am simply too lazy! I also have a hard time eating something warm now that it is Summer and the temperatures are high up. So this Tomato Avocado Balsamic Toast is one of my recent favorites and I will tell you why!

First of all it’s super easy to make!
Second, it uses fresh, good for you ingredients – always a good thing!
And last but not least it tastes fantastic and is just the right combination of earthy, salty and refreshing for those hot days!

You can also easily turn this into a dinner meal by adding some scrambled eggs on the side. Or even better, a omelet filled with spinach and other veggies! Give it a shot! I bet you have all of the ingredients at home right now anyways :)

Like I said, the recipe is super simple!

Toast a 40cal whole wheat toast to desired crispiness.
Mash 1/2 of a small ripe avocado (or 1/4 of a large one) together with a tiny bit of lime juice, spread on toast.
Cut up some tomato – as much as you can fit on that toast – and lightly press onto avocado.
Drizzle 2 teaspoons balsamic vinegar over it.
Enjoy!
