Slow Cooker Meatball Stew

As many of you might know by now, I started a full time job. My shift goes from 10:30 to 07:00pm. So as you can imagine, there is barely any time for me to cook besides on my days off. That’s why my wonderful husband took over in the kitchen and cooks whatever recipe I give him :)

That’s why you might still see crazy cakes, but also a lot of easy dinner dishes on Hungry Little Girl from now on.

This Slow Cooker Meatball Stew was one of the first things I let him cook. Let’s just say, so far he was barely able to make scrambled eggs, so if I post a recipe that he made here, you can be sure it’s 100% fool proof :)

We both loved this stew, it’s so easy to make and absolutely comforting! Yes, the recipe makes enough for four people, but we couldn’t stop eating and were actually fighting for the last meatball 😉 This is one of our go to recipes now and we had it a couple more times since he tried it the first time!

Slow Cooker Meatball Stew
Recipe type: Dinner
What you need
  • 1 pound frozen meatballs (about 16)
  • 4 medium potatoes, chopped into chunks
  • 4 medium carrots, peeled and chopped
  • 1 large onion, chopped
  • ½ cup ketchup
  • ½ cup water
  • 1½ tsp apple cider
  • ½ tsp dried basil
  • 1 cup frozen peas
  • salt and pepper to taste
How you make it
  1. In a large skillet over medium heat brown meatballs
  2. Place potatoes, carrots and onions in the crock pot.
  3. Top with meatballs
  4. Mix the remaining ingredients and pour over the meatballs
  5. Cover and cook on LOW 8 hours until vegetables are tender
  6. Add frozen peas the last 15 minutes of cooking time
Serve with rice or noodles :)
