Healthy Vanilla Mug Cake – Basic Recipe

Another Mug Cake Creation I am absolutely in love with! If you were looking for a mug cake recipe that is healthy, easy to make and super customizable, all I can say is: congratulations, you have found it :)

This Healthy Vanilla Mug Cake is the perfect basic mug cake recipe! Super fluffy and moist in texture, not spongy at all. Now this is the basic vanilla recipe, just let your mind go crazy on this one and create your very own mug cake. I have used the same recipe for this Healthy Carrot Coconut Mug Cake, I just simply swapped the applesauce for carrot baby food. Seriously, try different mix ins, liquids, toppings … It will always turn out perfectly delicious!

The whole cake can be enjoyed by yourself (guilt free) or you might want to share it with a special someone :)
**Note: Even tho it is called a mug cake, I would highly recommend to microwave it in a bowl since it rises pretty high**

Healthy Vanilla Mug Cake - Basic Recipe

What you need
The Cake:
  • ½ cup old fashioned oats
  • 1 tablespoon coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon sweetener of choice
  • 3 tablespoons applesauce, unsweetened
  • 2 tablespoons milk of choice
  • 2 egg whites
The Frosting:
  • ¼ cup Greek Yogurt
  • 1 tablespoons vanilla protein powder (can omit)
  • 1-2 tablespoons milk
  • 1 teaspoon sweetener of choice
How you make it
  1. Combine all cake ingredients in a small bowl until fluffy
  2. Spray a microwave save bowl with cooking spray
  3. Pour batter into bowl and microwave on high for 2 minutes (Microwaving times may vary)
  4. Dump on a plate and let cool a little before putting the frosting on
  5. Combine all frosting ingredients very well and spread over cooled cake
  6. Top with pomegranate seeds and enjoy :)
