Skinny Crockpot Chicken Pot Pie

Crockpot meals are great – they are quick to prepare, most of the time cheap and the meat is usually cooked to perfection. This Skinny Crockpot Chicken Pot Pie is one of those dishes – and in addition also healthy! Low Fat, life is great :)
The taste is comforting and definitely for the whole family. Not overspiced, but also not boring.
I like to make this dish on weekends. After a long day outside with the family it is nice to come home to something comforting that won’t ruin your shape or keep you in the kitchen for hours!

Skinny Crockpot Chicken Pot Pie
Recipe type: Dinner
What you need
  • ½ lbs chicken breast, boneless, skinless
  • ½ onion, chopped
  • ¼ teaspoon black pepper
  • 1 (10oz.) Cream of Chicken, fat reduced
  • 2 tabelspoons dried herbs of your choice (basil, oregano, parsley …)
  • 1 cup frozen vegetables, thawed
  • 4 Biscuits, low fat
How you make it
  1. Place chicken in your slow cooker
  2. Mix soup, onion, pepper and herbs in a small bowl until smooth, then pour over chicken
  3. Cover and cook on LOW for 8 hours
  4. About 30 minutes before serving make the biscuits according to package directions
  5. Stir veggies into the pot pie and turn your crockpot on high
  6. Once you biscuits are done, start plating
  7. For each serving split 1 biscuit and place in a soup bowl
  8. Spoon about 1 cup of chicken veggie mixture on top, enjoy :)
