Pear Coconut Squares

I was planning on saying way more about these delicious Coconut Pear Squares, but I have to rush to work. I just can’t wait sharing them with you any longer :)
So let’s make it short: For about 3 weeks I am in love with these bars now! They are so super easy to make, it’s pretty much just tossing everything together, pouring it into a baking form and that’s it! The texture is incredibly moist with that slight crunch from the coconut on top and flavor wise they blow me away whenever I make them – fruity, earthy deliciousness, perfect for Fall and Winter :)

I gotta head out now, but I promise I’ll be a little more chatty on my next recipe :)

Pear Coconut Squares
Recipe type: Dessert
What you need
The Bottom:
  • 1¼ cup all purpose flour
  • ½ cup butter, melted
  • 1 egg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
The Topping:
  • ¾ cup sugar
  • 1 cup sweetened coconut
  • 1 teaspoon coconut extract
  • 3 tablespoons butter
  • 1 tablespoon milk
  • A pinch of cinnamon
  • 2 cans of sliced pears, drained and chopped
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine all Bottom ingredients until smooth
  4. Press the dough into your brownie pan
  5. Place chopped pears on top
  6. In another large bowl stir together all Topping ingredients until well combined
  7. Pour over pears
  8. Bake for 35-40 minutes (until topping had browned)
  9. Let cool completely before serving

  1. You always have the most creative recipes. I am seeing a lot of pears in the stores right now, so this recipe is just perfect. I love the coconut on top, it makes me think I am in the Caribbean – where it is nice and warm!
