I was lucky enough to get some of this gluten free baking mix to try and I couldn’t wait for the weekend to come, so that I’d have enough time to bake.
The instructions are super easy to follow and I did not have any problems when it comes to being too sticky or too dry. I used the exact amounts it calls for on the instructions and it worked out perfectly! No hassle anymore with mixing different gluten free flour together yourself, hoping this would turn out. I decided to make a Gluten Free Cranberry Pie, simply because I got so many fresh cranberries from my co worker this week, I just wouldn’t know where else to use them, then in a delicious pie All I can say about his pie is: gluten free, easy to make, yummy and definitely a keeper

- 1 Bob's Red Mill Gluten Free Pie Crust
- 1½ cups sugar
- 3 tablespoons coconut flour
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¼ teaspoon nutmeg
- 1 cup cranberry juice
- 3 cups fresh cranberries
- 1 cup oat flour
- ⅓ cup butter (such as Smart Balance)
- ⅓ cup sugar
- 1 teaspoon cinnamon
- Preheat your oven to 400 F
- Prepare the pie crust according to package directions
- Place dough in pie form
- In a large bowl combine all ingredients for the crumble with your fingertips until coarse, set aside
- In a medium sauce pan combine all filling ingredients, bring to a boil, then let simmer until it starts to thicken up (about 3 minutes)
- Pour filling into pie crust
- Sprinkle crumbles on top
- Bake for 40 minutes
- Let cool completely before serving
