Orange Coconut Bars

 Alrighty, here is another recipe of my ___ Coconut Bars. I had made these Luscious Lemon Coconut Bars and these Fresh Strawberry Coconut Bars already. They all, including these Fresh Orange Coconut Bars, use the same basic recipe, just the fruit gets changed. So you see, this is definitely a keeper recipe that you can make again and again without having the same dish twice :)
This week I will make them with Raspberries and after that with Blueberries, you simply can’t go wrong at all with it!
As for the other ones these bars also have a crunchy bottom and this moist, gooey topping with strong flavors of coconut and orange! I love them! It’s orange season my friends, so let’s make the most out of them :)

Orange Coconut Bars
Recipe type: Dessert
What you need
The Crust:
  • 1 cup all-purpose flour
  • ½ cup butter, cold
  • ⅓ cup powdered sugar
The Filling:
  • 3 eggs
  • ¾ cup sugar
  • ¼ teaspoon salt
  • ⅓ cup freshly pressed orange juice
  • 3 tablespoon orange zest
  • ¾ cup unsweetened shredded coconut
  • 2 tablespoons powdered sugar
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine flour, butter and powdered sugar for the crust only with your fingertips until crumbly
  4. Press into baking pan and bake for 15 minutes
  5. Meanwhile in a large bowl combine eggs, sugar, salt, orange juice and orange zest until smooth
  6. Pour over pre-baked crust
  7. Sprinkle with shredded coconut and powdered sugar
  8. Bake for additional 22 minutes
  9. Let cool completely before serving

  2. I love these bars! I love all of the others too! I enjoy the combination of crunchy on the bottom and gooey on the top! I think those are my favorite types of desserts. The thing I love about bars it that you can cut them to any size! Sometimes I want a big piece and sometimes just a bite! Thanks for sharing!
