Tomato Coconut Cake

Each month several wonderful bloggers and me have to come up with a dish that combines two ingredients you would normally not put together :)
This months challenge was: Tomato & Coconut!

Honestly, as soon as I came up with this combo, I knew I have to (somehow) turn this into a dessert! I wanted to make a cake out of these ingredients so badly! And here it is: A Tomato Coconut Cake that is eggless, dairy free and so easy to make!

I have never had tomatoes in a sweet way so I was kind of scared, but that just makes me want to try things even more :)
The result has blown me away! The taste is just perfect, not too sweet, not too coconutty, but the highlight of this cake is the texture! A slight crunch on the outside and then this gooey, crumbly inside that melts in your mouth. Man, I am telling you, just in case you have some tomatoes left over, BAKE THIS CAKE!

I did not blanch the tomatoes, it’s so not necessary. I only cut them in quarters and take the seeds out, then chop them finely.
Now lets look at the recipe and then at what all other bloggers came up with :)

Tomato Coconut Cake
Recipe type: Dessert
What you need
  • 1 cup (about 3 medium sized) tomatoes, chopped, deseeded
  • ½ cup canola oil
  • 2 tablespoons apple cider vinegar
  • 1½ cups whole wheat flour
  • 1 teaspoon baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon coconut extract
  • ¼ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup unsweetened shredded coconut
How you make it
  1. Preheat oven to 375 F
  2. Spray a 8 inch pie pan with cooking spray
  3. In a large bowl combine tomatoes, oil and vinegar
  4. Add all remaining ingredients and fold in until all flour is wet (you might have to knead it a little)
  5. Press dough into pie form and bake for 30 minutes
  6. Let cool completely
