Low Fat Banana Chocolate Chip Bread – Super Moist

My husband goes crazy for banana bread! So I have to be really careful to not mess it up when trying a new twist on it or he would be so so disappointed!
I refuse putting lots of oil or butter in something that can get all his moistness and fluffy texture from the fruit it is made of anyway. So this Low Fat Banana Chocolate Chip Bread has absolutely no added fat! Bananas and coconut milk (or any other full fat milk) do the job just fine and the result is a super moist bread, that my husband loved :) He didn’t even notice it was a healthier version!
He eats it with butter, so for him I do not put the glaze on, but I like to eat it as a cake, so for me there is a little more chocolate 😛

Low Fat Banana Chocolate Chip Bread - Super Moist
Recipe type: Bread
What you need
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ⅓ cup coconut milk, canned
  • ⅓ cup brown sugar
  • 1 tablespoon lemon juice
  • 2 cups mashed ripe bananas (must be 2 cups after mashing)
  • ½ to 1 cup chocolate chips (I used sugar free)
How you make it
  1. Preheat your oven to 350 F \
  2. Line your loaf form with parchment paper
  3. Combine flour, baking soda, baking powder, salt and sugar in a large bowl
  4. Add coconut milk, lemon juice and mashed bananas
  5. Mix until combined (do not overmix)
  6. Fold in chocolate chips
  7. Transfer batter into your loaf form
  8. Bake for 40-45 minutes
  9. Let cool completely in the loaf form!
If you are like me and eat it as a cake instead of bread, then you could add a chocolate glaze on top :)

  2. I love banana bread and I love putting chocolate in it, but I also add walnuts to mine. This is great, I normally use almond milk but will try it with coconut milk next time.

  5. Looks yummy, I haven’t tried cooking with coconut milk yet. I will have to try this. My co-writer has made a no bake cookie with coconut milk I haven’t tried yet either. I wonder how often it goes on sale….hmmm. :)

  14. Is there a reason you recommend “full fat milk” as opposed to skim or 1%? The coconut milk sounds like a great idea, but just wondering how it would turn out if I used milk I already have at home.

    • Skim or 1% would work too. It just takes out a little of the fluffy and moist texture. That’s why I love using full fat coconut milk – Even tho it has fat, it’s only the good-for-you fat :)

  18. Nice! I must try adding coconut milk to substitute butter and oil in recipes. I once made banana bread that used apple sauce and it was quite delicious and healthy. This low fat banana chocolate chip bread looks super moist and brings both health and flavor.
