Banana Chocolate Streusel Cake

 This is one of the creations that happen simply because I have ingredients at home that I have to use before they go bad. I always buy 7 bananas on my weekly shopping trip. One for each day of the week. Well, last week was crazy and we haven’t really been at home all day long, so I had no chance to use them and since it was really warm, they were turning brown real quick. Before i throw them (or anything else) away, I try to figure out how to still use them. With bananas it’s easy, simply bake something :)
This Banana Chocolate Streusel Cake is so packed with bananas, your house will smell so nice and combined with that huge amount of chocolate streusel, you will have such a wonderful flavor explosion in your mouth!
Since the cake part is sweet enough, I didn’t use sugar in the streusel. I like the contrast between sweet banana and this earthy taste you get from unsweetened cocoa. If you do not like this taste (I know there are many people out there), add some brown sugar.

Banana Chocolate Streusel Cake
Recipe type: Dessert
What you need
The Cake:
  • 2 eggs
  • ½ cup oil
  • 4 ripe bananas, mashed
  • ¾ cup sugar
  • 1½ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
The Streusel:
  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ cup butter, cold
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine all cake ingredients until smooth
  4. Pour into baking pan
  5. In another large bowl combine flour and cocoa powder for the streusel
  6. Add cold butter and mix only with your fingertips until crumbly (that takes about 5 minutes)
  7. Sprinkle streusel all over cake batter
  8. Bake for 30-40 minutes

  2. I never throw away bananas, you can freeze them to use in smoothies. I do not use ice in my smoothies, I use frozen bananas, this makes it thick and creamy. I love baking with bananas and I was just saying I wanted something chocolate. I may go bake this right now :)

  7. Don’t throw away bananas! When they start to get too ripe and you can’t think of a way to use them just throw them in the freezer for later. You can also make vegan ice cream with bananas!
