Lemon Blueberry Muffin Cake

Summertime means we want fruity, berry deliciousness :)
Blueberry and lemon is a combo that always works. Sweetness from the berries and this refreshing kick from lemons – simply YUM!
A while back I have made a Lemon Blueberry Pie with a Pink Coconut Crust (to celebrate Hello Kitty) and now I thought I’d turn it into a cake.
This Lemon Blueberry Muffin Cake is so super fluffy and light in texture, but full of flavors. Definitely a Summer cake.
The dough will be pretty thick, so don’t be scared, you didn’t do anything wrong, that’s how it is supposed to be. It will turn out like a huge fluffy muffin :)
If you can wait to let it get cold before eating, you will get the nice color of the frosting as you see it in the last picture. But good luck with that, I couldn’t and had my first two pieces warm :)

Lemon Blueberry Muffin Cake
Recipe type: Dessert
What you need
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter, softened
  • ¾ cup sugar (white or brown)
  • 2 eggs
  • 2 cups (or more) frozen blueberries
  • 1½ tablespoons lemon zest
  • ½ cup sour cream (or Greek yogurt, or silken tofu)
The Glaze:
  • 1½ cups powdered sugar
  • 1 tablespoon lemon juice
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine flour, baking powder, sugar, salt and lemon zest
  4. Add butter, eggs and sour cream
  5. Mix until just combined
  6. Gently fold in blueberries, do not overmix
  7. Spread out the batter in your baking pan
  8. Bake for 45-55 minutes
  9. While the cake is still hot combine powdered sugar and lemon juice (it should be very thick) and brush over cake
  10. Enjoy warm or later on cold :)
