Crustless Flourless Zucchini Pie

┬áSometimes, especially after holidays, I need healthier meals. Healthy meals that are easy to make. Standing 2 full days in the kitchen to prepare a holiday feast even makes a foodie like me sick of seeing the kitchen. So a dish like this Crustless Zucchini Pie that you throw together real quick and just wait until it’s done is perfect!
The pie is flourless what cuts out lots of carbs – pretty necessary after indulging all those starchy holiday side dishes :)
This is also a dish that you can have for breakfast, lunch and/or dinner. Leftovers can be eaten cold – it’s super yummy!

Crustless Flourless Zucchini Pie
Recipe type: Dinner
What you need
  • 3 cups shredded zucchini
  • 2 eggs
  • 3-4 slices low sodium ham
  • 4 oz. shredded cheese (I used Mexican)
  • ½ teaspoon baking soda
  • ½ teaspoon pepper
  • salt to taste
  • 1 teaspoon garlic powder
How you make it
  1. Preheat you oven to 350 F
  2. Spray a 9 inch pie pan with cooking spray
  3. Drain the shredded zucchini by squeezing it in a dish towel very good (if you think you are done, squeeze again!)
  4. Combine zucchini, eggs, cheese, ham, baking soda, pepper, salt and garlic in a large bowl
  5. Pour mixture into pie pan and press down slightly
  6. Bake for about 40 minutes (if still not set in the middle add 10 more minutes)
  7. Let set in pan after baking for 10 minutes, then serve
