Healthy Microwave Blueberry Mug Cake

 It’s Healthy Monday here on the blog! After indulging all the not so healthy things on the weekend, I am ready for something yummy that actually doesn’t sit on my hips for a long time :)
This Healthy Microwave Blueberry Mug Cake is a variation of my Microwave Chocolate Mug Cake (also healthy) and I am in love with it.
The whole thing is one serving size, but I am never able to finish it alone and share it with my husband. You would never guess this cake is healthy, nor does it have this dense and dry texture lots of mug cakes have! It’s super moist, the flavors are strong and combined with the refreshing frosting it melts in your mouth. Low fat, low carb and low sugar – what do we want more right?! Those mug cakes are basically my go-to dessert during the week (when I try to live healthy), before I eat all the decadent stuff on the weekend :)

Healthy Microwave Blueberry Mug Cake

What you need
The Cake:
  • 2 tablespoons coconut flour
  • ½ banana, mashed
  • 2 tablespoons liquid egg whites (or one normal egg white)
  • ¼ cup milk of choice (I used canned coconut milk)
  • 1 package stevia
  • ½ teaspoon baking powder
  • ¼ cup dried blueberries
The Fluff:
  • 2 tablespoons Greek yogurt, fat free
  • ½ scoop vanilla whey protein powder
  • 1 tablespoon milk
  • 3 tablespoons dried blueberries
How you make it
  1. In a small bowl combine all cake ingredients besides blueberries until smooth
  2. Fold in blueberries just until all covered with batter
  3. Spray a 4 inch ramekin with cooking spray
  4. Transfer batter into ramekin and microwave on high for 3 minutes
  5. Dump cake onto a plate and let cool while you prepare the fluff
  6. Simply mix yogurt, whey, milk and blueberries together and top cake with it
  7. Enjoy warm!

  2. You are so right, I would never guess this is a healthy cake! I love that it is a single size. Many times I want a dessert and no one else does – this would be perfect!
