Welcome to the sixth Surprise Recipe Swap in 2013 – Each month me and some fellow bloggers get assigned to another blogger and have to pick and cook a recipe from our partners blog!
This month I was assigned to CJ from Morsels of Life  –  I follow her blog for quite a while already, so I was very happy to get to pick something from her!
With Summer so close her Nutella Coconut Popsicle recipe caught my eye instantly.
Only 3 ingredients to deliciousness – YAY!
I just made one change, simply because I can not have Nutella in my house! It would be gone in minutes and then sit on my waist forever haha :)
But let’s look at the recipe, then I will let you know more about my experience with her recipe and changes I made and of course the taste!

Chocolate Coconut Popsicles - Surprise Recipe Swap
Recipe type: Dessert
What you need
  • ½ cup unsweetened shredded coconut
  • 14 oz. canned coconut milk
  • 4 tablespoons Skippy Natural Peanut Butter Spread with Chocolate
How you make it
  1. Throw all ingredients into a blender
  2. Blend on high until smooth
  3. Pour into Popsicle molds and freeze for several hours
Amount of Popsicles this recipe makes depends on the size of your molds - I have small ones so it made 7
The Recipe and Taste: First of all I want to mention that the recipe you see above is slightly changed up from the original. I did not use Nutella! I chose Skippy Natural Peanut Butter with Chocolate since it has 60% less sugar than Nutella and I always have it at home :)
The combo of creamy chocolate spread and creamy coconut milk (that’s why I used the canned type) was fantastic. Not too sweet and just the right texture! I will have some in the freezer now all Summer long, because it really couldn’t get easier than mixing up three ingredients to have healthy affordable ice cream!
