Walnut Coconut Cheesecake

By now I am sure you know of my addiction to cheesecakes! I love the smooth texture and the endless possibilities to make them special! I never bake the exact same cheesecake a second time, because I always have new ideas to fancy it up :)
This time I went for coconut milk in the batter, what makes the cheesecake so creamy and fluffy – unbelievable!
I also picked lemon juice instead of vanilla extract for the filling, because I thought it would be a great contrast to the earthiness of the nuts and coconut – and how right I was. Crunchy, nutty crust, super smooth filling – simply another wonderful cheesecake :)
Walnut Coconut Cheesecake

What you need
The Crust:
  • 1⅓ cups old-fashioned oatmeal
  • 1 cup walnuts, grounded
  • 6 tablespoons butter, melted
  • ⅓ cup coconut palm sugar (or brown sugar)
  • ¼ teaspoon salt
The Filling:
  • 1 package (8oz.) cream cheese, fat reduced
  • ⅓ cup sugar
  • 1 teaspoon coconut flour (or corn starch)
  • 2 eggs
  • ⅓ cup + 2 tablespoons coconut milk, the canned type
  • 1 tablespoon lemon juice
  • ¼ cup unsweetened shredded coconut
How you make it
  1. Preheat you oven to 350 F
  2. Spray a 8 inch pie pan with cooking spray
  3. In a large bowl combine all crust ingredients until very well combined
  4. Press dough into pie pan and bake for 10 minutes
  5. Meanwhile bring together cream cheese, sugar, coconut flour and eggs in a large bowl
  6. Mix with an electric mixer until smooth
  7. Add coconut milk, lemon juice and shredded coconut
  8. Mix until well combined
  9. Pour mixture into pre-baked crust (top with nuts and coconut i and bake for 15 minutes
  10. After 15 minutes turn the temperature down to 275 F and bake additional 30 minutes
  11. Let cool 30 minutes before placing in the fridge to cool completely
