Healthy Chocolate Mug Cake with Peanut Butter Frosting

What you need
The Cake:
  • 2 tablespoons coconut flour
  • 2 tablespoons cocoa powder
  • ½ ripe banana, mashed
  • 2 tablespoons egg beater original (or 1 egg white)
  • ¼ cup milk (skim, almond or coconut)
  • 1½ packets stevia
  • ½ teaspoon baking powder
The Frosting:
  • 1 teaspoon peanut butter
  • 2 tablespoons plain Greek yogurt (or fat free sour cream)
  • ¼ teaspoon stevia
  • A pinch of cinnamon, optional)
How you make it
  1. In a small bowl combine all cake ingredients and mix until smooth
  2. Spray a 4 inch ramekin with cooking spray
  3. Transfer batter into ramekin, spread out a little and microwave on high for 2,5 minutes
  4. Check if the middle is still kind of too liquid
  5. If so, then microwave additional 30-45 seconds
  6. Dump out of the ramekin onto a plate
  7. Combine the frosting ingredients until smooth
  8. Spread over cake (maybe even drizzle with some coconut) and enjoy :)
