Healthy Apple Crumble Bars

I don’t know about you, but I love apples! I have one every day. Sometimes in my oatmeal, sometimes in a salad, simply as a snack or, my favorite way to enjoy it, in a baked goodie :)
These Apple Crumble Bars are made with “good-for-you”-ingredients, so you can have a piece guilt free!
I don’t even know what to tell you on how to eat them best. I had a piece while it was still warm with ice cream on top and it was great, but I also had one when it came out of the fridge the next day and it was still great! Guess it depends on if you want the crust to be crispy. If so, then do not place this cake in the fridge! Eat it about an hour after baking and keep leftovers only covered with some paper towel!
Healthy Apple Crumble Bars
Recipe type: Dessert
What you need
  • 1½ cups whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup coconut palm sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons buttery spread (such as earth balance)*
  • 2 tablespoons skim milk
  • 2 cups chopped apples
  • 1 heaping teaspoon coconut flour
  • 3 teaspoons sugar free syrup
  • 1 teaspoon vanilla extract
  • *can be substituted with butter or coconut oil
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine flour, baking powder, salt, sugar and cinnamon
  4. Add buttery spread and milk
  5. Mix with fingertips until well combined and crumbly
  6. Press ½ the dough into baking pan
  7. Now combine chopped apples, coconut flour, syrup and vanilla until all coated
  8. Place apples on top of bottom dough and top with the remaining dough
  9. Press down gently and bake for 45 minutes
  10. Let cool at least 30 minutes before cutting
