Tuna Strawberry Salad



When my husband hears the word salad he always gets scared he will end up starving after dinner (so far this never happened haha).
This Tuna Strawberry Salad is, like all other salads I make, meant to be a complete dinner or lunch meal, not a side dish.
Filled with good nutrition and so easy to make this is definitely the right things to get you into Spring mode and shape :)
On colder days I simply throw the whole thing into a pan for 5 minutes. I use frozen berries because I need the juice they loose while heating up for my dressing :)
You don’t like strawberries?! Try blueberries, mango or raspberries – they all work great!

Tuna Strawberry Salad
Recipe type: Salad
What you need
  • 2 small cans tuna (in water), drained well
  • 2 cups baby spinach
  • 2 eggs, hard boiled
  • 1 ripe avocado, cut into chunks
  • 1 cup strawberries, frozen
  • ½ cup black beans, rinsed and drained (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon garlic powder
How you make it
  1. In a large bowl combine tuna, baby spinach, avocado, black beans, oil, vinegar and garlic and mix gently until well combined
  2. Microwave frozen strawberries for 1 minute
  3. Toss into the salad and mix until combined
  4. Divide equally onto two plates
  5. Cut hard boiled eggs into chunks and place on top of the salad - serve and enjoy :)
