Lemon Blueberry Pie on Pink Coconut Crust


My husband sells toys, and when he ordered hundreds of these Hello Kitty’s I had to beg quite a while to get one. Now I thought it was time to bake her a cake haha :) I had pink sprinkles left from valentines and they were the perfect fit to put them in the crust instead of sugar! The pie itself tastes amazing! The fruitiness from the berries and lemon works so so well with the coconut crust. Smooth on the inside, crunchy on the outside, nice to look at – simply a perfect pie for every girl!

What you need
The Crust:
  • ¾ cup all-purpose flour
  • ⅔ cup unsweetened coconut flakes
  • ¼ cup pink sugar sprinkles (or white sugar if you do
  • ¼ cup butter, softened
  • ¼ teaspoon salt
  • 1 teaspoon lemon juice
The Filling:
  • ½ cup all-purpose flour
  • ½ cup sugar
  • ¼ teaspoon salt
  • 6 tablespoons butter
  • 2 eggs
  • ¼ cup lemon juice (I really recommend using fresh lemons)
  • 1½ cups frozen blueberries
The Glaze:
  • 1 cup powdered sugar
  • 1-2 tablespoons lemon juice
