Ginger Date Bars with Ginger Glaze

Last week I was standing in my kitchen looking for an ingredient I usually never use in my baking and there it was – my little container of ginger! I was inspired right away and got started, knowing I had to sweeten this one up, because the amount of ginger I planned on using would make these bars pretty spicy :)
Only a tiny bit of butter, some dates and WW flour  turned my idea into something amazing! I am in love with these Ginger Date Bars, I will make them all summer long, because they are so refreshing :)

 

Ginger Date Bars with Ginger Glaze

What you need
  • The Bars:
  • ¼ cup butter, softened
  • ¾ cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • ¾ cup whole wheat flour
  • ¼ cup quick oats
  • 2 tablespoons powdered ginger
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup pitted dates, chopped
  • The Glaze:
  • 1 cup powdered sugar
  • 1-2 tablespoons powdered ginger (depends on how intense you want it )
  • 1-2 tablespoons lemon juice
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan witch parchment paper
  3. In a large bowl combine all bar ingredients with a spatula(!) until all crumbly and sticking together
  4. Press the dough into baking pan and bake for 20 minutes
  5. Let cool completely in baking pan
  6. When cooled, stir together the glaze ingredients and brush over bars
  7. Place in fridge for 5 minutes to set, then serve :)
