Coconut Crack Bars / Hearts



Have you ever had a look at Chocolate Covered Katies page?! She has some crazy good desserts there – and they are all healthy :)
I happened to buy way to much unsweetened coconut flakes (I thought 4lbs would be less haha), so I am in need of recipe that use quite a bit of it. These Coconut Crack Snack Bars live up to their name! Highly addicting!
The ingredients are thrown together in couple minutes and after an hour in the fridge you can snack it up :)
Well, I snacked them away in half an hour!
Coconut Crack Bars / Hearts

What you need
  • 2 cups unsweetened shredded coconut
  • 6 tablespoons water + 4 pouches Truvia
  • (or 6 tablespoons maple syrup, or honey)
  • ¼ cup coconut oil, not melted
  • A pinch of salt
How you make it
  1. Throw all ingredients in a medium bowl and knead until well combined an sticky
  2. Press into a 8 inch square dish
  3. Place in fridge for 1 hour, then cut however you want them (bars, hearts with a cookie cutter, squares) and enjoy

  1. I made these – OMG I shaped them into ovals (about an inch long) pressed a roasted sea salted almond on top of each and drizzled dark melted chocolate (Lilys sugar free) – amazing low carb and tastes like almond joy!!!!
