Chocolate Protein Almond Blondies


Chocolatey deliciousness is all I can say to this treat! The level of healthiness of this treat depends on what ingredients you use. I use coconut oil instead of butter, Truvia instead of sugar and sugar free chocolate chips. But basically, you don’t need to use them if you don’t mind the extra calories. I just put both options in the recipe, so you can decide yourself!These bars are heavenly if you eat them warm (I let the chocolate only set for 5 minutes and then I dig in :)

Chocolate Protein Almond Blondies

What you need
  • ¼ cup butter (or coconut oil), softened
  • ¼ cup unsweetened applesauce
  • 1 cup sugar (or Truvia to equal one cup)
  • 1 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 egg whites
  • 1 egg
  • ⅔ cup vanilla protein powder
  • 1 cup sliced almonds
  • 1 cup semi-sweet chocolate chunks (I use sugar free ones), divided
How you make it
  1. Preheat your oven to 350 F
  2. Line a 8 inch brownie pan with parchment paper
  3. In a large bowl combine butter, applesauce, sugar, vanilla, egg whites and egg until smooth
  4. Add flour and protein powder, stir until well combined
  5. Fold in almond slices and ½ cup of the chocolate chunks
  6. Bake for 35-40 minutes
  7. Turn off the oven and sprinkle remaining chocolate chunks on top of the brownie
  8. Put brownie back into the oven for 2-3 minutes, then spread half melted chocolate chunks to cover the top
  9. Serve warm or at room temperature
