People love to think that Paleo means no cakes, no pies, now sweets at all - Wrong! This Raw Apple Pie is proof of being able to live a healthy lifestyle without all-purpose flour and sugar, but still enjoy sweet treats, like everyone else does!
If you decide to switch to a Paleo or even completely Raw Lifestyle, nuts are your best friend! There are great online store to buy them in bulk and simply make your own flour out of it! I NEVER buy it at the store!
You also want to stock up on pitted dates for all your sweet treats :)

What you need

The Crust:
1 cup walnuts
1 cup almond meal (grind almonds yourself)
1/2 cup pitted dates, chopped
1 teaspoon lemon juice

The Filling:
5 medium apples
10 pitted dates, chopped
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg

*Pie stays good for 4-5 days if covered and stored in the freezer
How you make it

  • Combine walnuts, almond meal, dates and lemon juice in a food processor and pulse until sticky
*if you don't have a food processor you can do it in a blender or grinder too, but split it in two parts and scratch the sides down again and again to get an even texture*
  • Press dough into a 8 inch pie form and place in fridge

  • Peel, core and slice the apples
  • Place half the apple slices and dates in a blender and blend until it becomes thick applesauce
  • Combine sauce with remaining apple slices, cinnamon, nutmeg and ginger in a medium bowl
  • Fill pie crust with it and place back in fridge for another hour before serving

I have never heard of a crust like this! I bet it would taste wonderful under any type of pie filling. I know my daughter would love this!
