Microwave Pancake Cake with Strawberry and Blueberry Cream 



Sometimes I just love to pamper myself with yummy goodies :)
This Pancake Cake is something I make on weekends when I know I will sleep in the next day and pretty much have brunch instead of breakfast.
While I live pretty healthy all week long, I love to go really decadent on weekends :)
I don’t know what I love more about this cake, the colors or the taste – both are amazing and making me happy right after waking up already. Since we had some morning sun I simply had to take the picture outside (morning sun doesn’t happen often here in the state of Washington, let me tell you that).

Microwave Pancake Cake with Strawberry and Blueberry Cream
What you need
  • The Pancakes:
  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 2 cups milk
  • ¼ cup canola oil
  • 2 eggs
  • The Strawberry Cream:
  • ¼ cup strawberry jam, sugar free
  • ½ cup sour cream, fat free
  • The Blueberry Cream:
  • 4 oz cream cheese, softened
  • 1½ cups blueberries, frozen
  • 1 tablespoon cornstarch
How you make it
  1. In a large bowl combine all pancake ingredients and stir until very well combined
  2. Spray a microwave safe 6 inch square dish with cooking spray
  3. Pour ⅔ cups of the batter into it, spread out a little
  4. Microwave on high for 1 to 1,5 minutes (start with one minute and if it's still a little wet in the middle add some seconds)
  5. Dump on a paper towel and repeat process with the remaining dough until all used
  6. While the pancakes are cooling down combine strawberry cream ingredients in a medium bowl, set aside
  7. In another medium microwave safe bowl combine cream cheese and blueberries
  8. Microwave on high for 1 minute
  9. Stir in cornstarch and microwave for another 45 seconds, let cool a little
  10. Now either you cut out circles or use the whole pancake squares:
  11. Either way start by spreading the blueberry cream onto it (the cream should be very thick) and finish off with strawberry cream on the second layer
  12. Place in fridge for at least one hour before serving (better over night)
