This is another one of my "I have no idea what I am doing"-creations! All I knew was, I wanted brownies, but also creaminess and a crunch to it.
Nuts were on sale last week, so I bought half the store and decided to put some in my brownies, but that was not enough crunch for me so I made a crust out of rice cereal (please feel free to leave it away). At some point the brownies were in the oven and I started looking around what I had at home to satisfy my cravings for creaminess - Pudding! So I made a quick mousse out of the pudding and whipped cream and since I had made way too much whipped ream, I topped the whole thing with it. That looked kind of odd, so I sprinkled some more nuts and chocolate on top and voila - a flavor and texture explosion in my mouth was created :)
I don't think I will make brownies different anymore. It just simply all fits together so so good! Even tho I would really like to try them on a Graham cracker crust - but then I probably never stop eating them anymore :)

What you need

The Crust:
4 cups rice cereal
1/4 cup butter, melted

The Brownie:
1/4 cup butter
6 tablespoons cocoa powder
1 cup sugar
1/2 cup all-purpose flour
2 teaspoons vanilla extract
2 egg whites
1 cup walnuts, partially grounded
(I simply put them in a grinder for a couple seconds, so that I have some grounded and some chopped)

The Mousse and Topping:
2 cups heavy cream
2 tablespoons cornstarch
3 tablespoons powdered sugar
1 large box instant chocolate pudding
1 1/2 cups milk
1/2 cup walnuts, chopped
1/3 cup dark chocolate chips
How you make it

Preheat your oven to 350 F
Line a 8 inch brownie pan with parchment paper

  • In a large bowl combine rice cereal and melted butter until all cereal is tossed in butter
  • Press into baking pan and bake for 12 minutes
  • Meanwhile in a large bowl mix together all brownie ingredients until very well combined
  • Pour over pre-baked crust and bake for additional 30 minutes
  • Immediately take out of the form and let cool completely before topping with mousse and cream

  • Beat heavy cream, cornstarch and powdered sugar until stiff, set aside
  • Prepare pudding with only 1 1/2 cups milk (instead of 3), let stand 10 minutes then fold in 1/3 of the whipped cream
  • Spread chocolate mousse over cooled brownie
  • Spread remaining whipped cream on top and finish off by sprinkling nuts and chocolate chips over the cream
  • Place in fridge for another 30 minutes before serving
