Either way it's fantastic - easy and fast to make while totally satisfying!
I know lot's of people who put pesto on it, tho I have to say I am absolutely good with only oil and balsamic vinegar.
This recipe is meant for it being a main dish for 2-3 people, as a side dish it's probably enough for up to 8.
If you do have the time, prepare it in the morning and keep it in a closed container in the fridge, the flavors will come together even nicer then!

4 ounces mozzarella cheese
2 medium tomatoes
1 teaspoon oregano, fresh or dried
1 tablespoon balsamic vinegar
2 tablespoons oil
