Pineapple White Chocolate Coconut Oatmeal



If I could I would change my middle name to Oatmeal – Jutta Oatmeal Lenihan – yes please haha!
It took my 24 years to see the awesomeness of this food and for two years now I can’t get enough of it!
A day without oatmeal is a very sad day for me! I don’t care if it comes in a bowl, a cookie, cake or even somehow in a dinner dish.
This Pineapple White Chocolate Coconut Oatmeal is one of my lunch favorites!
Sweet, but not too sweet, fruitiness from the pineapple, amazing flavors from the coconut and rich creaminess from the cheese! This bowl keeps me satisfied for hours and won’t ruin my shape even tho it tastes like it would haha!

Pineapple White Chocolate Coconut Oatmeal
Recipe type: Breakfast
What you need
  • ¼ cup old-fashioned oatmeal
  • 1 heaping tablespoon white chocolate chips
  • 2 tablespoons crushed pineapple, low sugar
  • ¼ cup pineapple juice (out of the can of the crushed pineapple)
  • 1 heaping tablespoon coconut flakes
  • 1 tablespoon cream cheese, fat free
  • White and dark chocolate chips for garnish, optional
How you make it
  1. In a small microwave safe bowl bring together in this order: oats, white chocolate chips, coconut, cream cheese, crushed pineapple and pineapple juice, don't stir
  2. Microwave on high for 1 minute
  3. Stir and garnish with some chocolate chips
