Don’t you love granola bars?! Well, I do. I could actually live off of them.
Buying them can get pretty expensive, if you eat them in a large amount like I do, so I decided to simply make them myself! This way I can make exactly the flavor combo I like, with all the add-ins I want :)
These Chocolate Bottomed Granola Bars are a pretty basic recipe. There are a million ways to change that recipe into YOURS! Take different seeds, different cereal, other chocolate, no chocolate but dried fruits, coconut, … You name it!
They are so soft and chewy and fresh! I hate it when you get one at the store that is already rock hard!
Pack them in wax paper with a little band around it and pack it into your loved ones lunchboxes (or your’s :) )

Chocolate Bottomed Granola Bars 
Recipe type: Snack
What you need
  • ⅓ cup brown sugar
  • ¼ cup honey
  • 4 tablespoons butter
  • 2 cups old-fashioned oatmeal
  • 1 cup chex cereal
  • ¼ cup sesame seeds
  • 1 teaspoon vanilla extract
  • 4 tablespoons mini chocolate chips
  • ¾ cup semi-sweet chocolate chips, for the bottom
How you make it
  1. Bring a small saucepan over high heat
  2. Add brown sugar, honey and butter
  3. Cook for about 2-3 minutes, set aside
  4. In a large bowl bring together oats, chex and sesame
  5. Pour butter/sugar mixture over it, add vanilla and stir until all dry ingredients are coated
  6. Transfer mixture into a 8*8 inch square dish (coat with parchment paper before) and press down as much as you can
  7. Sprinkle mini chocolate chips on top, only lightly press them down
  8. Let cool for at least 2 hours
  9. Now dump the uncut bars on a working surface (upside down), melt chocolate chips in the microwave and brush the bottom with it
  10. Let cool and set, then flip around and cut into bars
