Cauliflower Turkey Casserole 



This Cauliflower Turkey Casserole is such a easy, but mind-blowing dish!
The cheesy, meaty cauliflower bottom is topped by crispy turkey stuffing.
It’s prepared pretty fast and while the casserole is in the oven, you already have time to clean up the dishes you used to prepare it :)
This dish is also pretty low carb and low fat, so don’t be scared to dig in and take a little more than usual!

Now I know many people don’t like stuffing, but prepared like that -super crispy- no one can resist. But just in case, you can also substitute the stuffing with bread pieces mixed with some spices :)

Cauliflower Turkey Casserole

What you need
  • ½ lbs ground turkey
  • 1 medium head cauliflower
  • ¼ cup parmesan cheese, fat reduced
  • ¼ cup all-purpose flour
  • 2 cups milk, skim
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • A pinch of salt and nutmeg
  • 1 package turkey stuffing mixture
  • 1 cup chicken stock
  • ⅓ cup butter
How you make it
  1. Preheat your oven to 350 F
  2. Meanwhile cook your cauliflower in boiling water for 5-8 minutes, drain and place in casserole dish
  3. Brown ground turkey in a skillet and place over cauliflower
  4. In a medium sauce pan combine milk, flour, parmesan cheese, garlic, salt, pepper and nutmeg and cook over high heat until all thickened up, stirring constantly
  5. Pour sauce over cauliflower
  6. In a large bowl combine stuffing mixture, stock and butter
  7. Microwave on high for 1½ minutes, stir, then place over cauliflower and press down gently
  8. Bake for 25 minutes, then turn on the broiler and broil on high for 5 minutes ... serve :)
