Welcome to the first Surprise Recipe Swap in 2013 - Each month me and some fellow bloggers get assigned to another blogger and have to pick and cook a recipe from our partners blog!
This month I got assigned to Red, White and Blueberries - Melissa, the host brings a TEXAS Twist to her dishes, so I had lots of deliciousness to choose from :)
But there was one dish I couldn't forget, after looking through her whole blog - her Easy Overnight Vegetarian Lasagna!
Why I chose this dish?! Well, first of all I've never had a vegetarian Lasagna and hers sounded so easy and just perfect for when you know you won't have time to cook the next day. Throwing everything together the night before sounded just perfect to me, so I wanted to give this one a shot!
Let's first have a look at the recipe, before I tell you more about how easy it really was and talk a little about the taste.
What you need
see note below for the changes I have made to the original recipe*

1 package lasagne noodle plates (about 10-12 plates)
1 jar spaghetti sauce (28oz.)
1 container ricotta cheese, skim (16 oz.)
3 cups shredded cheese, fat reduced
2 tablespoons garlic powder
2 tablespoons oregano
1/2 cup hot water

*original recipe calls for whole wheat lasagna plates, mozzarella cheese and rosemary, see the original recipe here

How you make it

  • Spray an 11×13 casserole dish with cooking spray
  • Stir the garlic and oregano into the ricotta cheese
  • Place a thin layer of the sauce on the bottom of the casserole dish
  1. Add a single layer of lasagna noodles
  2. Cover the noodles with half the ricotta mixture (It’s easier to spread with your fingers)
  3. Spread 1/3 of the shredded cheese on top of the ricotta
  4. Cover cheese with a layer of sauce
  • Repeat steps 1-4
  • Place a 3rd single layer of noodles on top
  • Spread the remaining sauce on top of the noodles and finish off with the rest of the shredded cheese
  • Pour the ½ cup of hot water along the edges of the pan making sure the water gets down below
  • Cover tightly and refrigerate overnight
  • The next day simply bake it at 350 degrees for 45 minutes until the top is golden brown
As you can see, I am not very talented when it comes to making dinner dishes look beautiful on pictures, never have and probably never will be ;) But luckily Melissa is, she also has some great "how to" pictures over at her blog, to show you exactly how it it's made! Now to the facts ...

The Recipe and Taste: I love it when a recipe works exactly the way as describes as it was the case with this one! No changes needed. I only did my changes, because I had those ingredients at home! The result you get from this recipe is a perfectly cooked lasagna, that also offers lots of variation possibilities. Adding your favorite veggies to it, going crazy on the cheese by maybe adding some feta cheese or even blue cheese or swirling a little BBQ sauce into the spaghetti sauce ... I can imagine this all as very delicious. What made me especially happy is, that I can make it whenever I've got time and put it into the oven whenever I want it! It's like a healthy version of a store bought freezer lasagna. This is not the last time me and my hubby will enjoy this wonderful dish - Simply a keeper recipe!

Looks delicious! I have done a vegetarian lasagna and I use lots of fresh veggies. This is super easy and well you can't go wrong with all that cheese! On my way to her blog now!

This looks so incredibly cheesy and delicious! Cheese and noodles are my favorite so I am definitely going to try this one soon!

I use egg roll wraps instead of lasanga noodles. just peel andplace .No pre cooking or mess. Technically it is the same as fresh homemade pasta before its dryed.
