Yes, I have found a new addiction! Rice Krispy Treats it is. Believe it or not, I had my very first rice krispy treat like 10 days ago and instantly fell in love with it. I went to the store, got me some rice cereal and started making my own. Now within ten days I have made 4 different kinds and they are all gone already!
These were my first ones. I got so excited that I forgot to buy marshmallows (don’t like them anyway), so I used corn syrup. Now I only had to give them a little special something, so I wanted to combine it with fruit somehow. Well, some healthy frosting between the krispies and the fruit did the job just perfectly! A creamy, crunchy and fruity sensation is what awaits you
- 3 cups rice cereal
- 1 cup crushed Graham Crackers
- ½ cup corn syrup
- ⅔ cups peanut butter
- 1 teaspoon vanilla
- 4 ounces cream cheese, fat free
- 4 ounces sour cream
- ½ cup powdered sugar
- 2 cups mango, sliced (I use the frozen ones from the dollar store, thawed)
- Place rice cereal and crackers in a large bowl
- In a small saucepan combine corn syrup, peanut butter and vanilla
- Bring to a boil and cook until completely smooth
- Pour over rice cereal and stir until all rice is covered with sauce
- Press into a 8 inch brownie pan and put into fridge until cooled (20 minutes)
- Meanwhile in a medium bowl stir together cream cheese, sour cream and powdered sugar until smooth
- Spread gently over cooled rice krispy treats
- Layer sliced mango pieces on top and place back in fridge for 1 hour
- Take out of the fridge and cut 30 minutes before serving
