So about one month ago I got my first ever crockpot and I am in love with it!
The first two weeks I only cooked recipes in it, that I found on the internet to start understanding how things in there work. Well, by now I am able to come up with my own dishes, what makes me very happy, because now I can share them with you :)
This Chickpea Stew is the best thing I have cooked in it so far. Amazing aromas come together so easily. A nice spicy flavor combined with the sweetness of the plums, perfectly rounded up by some cinnamon!
The nuts on top simply give it this special something I am always looking for in a dish!
You for sure won’t miss meat in this stew – but you might get addicted to it!

Addicting Chickpea Stew (Slow Cooker)
Recipe type: Dinner
What you need
  • 2 cans (15oz) chickpeas, drained
  • 1 medium onion chopped
  • 1 tablespoon garlic
  • 1 can diced tomatoes
  • 1 con tomato sauce
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ⅓ cup peanut butter
  • 1 tablespoon hot sauce
  • 6-8 dried plums
  • Vegetable stock
  • Walnuts, chopped (for garnish)
How you make it
  1. Place all ingredients besides the nuts in a slow cooker and stir until combined
  2. Fill with vegetable stock just until chickpeas are covered
  3. Cook on low for 6 hours
  4. Serve with chopped nuts and a side salad
