Winter Rice Pudding (Christmas Milk Rice)

Do you like rice pudding? Well, I do, my husband doesn’t :) But he doesn’t like anything that was usually meant for savory dishes and is turned into a sweet dish.
I make myself some rice pudding at least twice a month – in summer always with fresh fruit and a lemon flavor, but now in winter I use winter ingredients like nuts, raisins and orange, spiced of course with cinnamon and gingerbread spice!

The recipe is good for 4 dessert sized portions or 2 main courses. Yes, we Germans eat that as a normal dinner meal :)
I also love to add some fruit cocktail (the canned one) or ice cream on top!

Winter Rice Pudding (Christmas Milk Rice)

What you need
  • 1 cup quick white rice (the one you could make in the microwave)
  • 2 cups milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon butter
  • 2 tablespoons eggnog
  • 1 package (2oz.) trail mix
  • 2 tablespoons brown sugar
  • 1 teaspoon gingerbread spice
  • 1 teaspoon orange zest
  • 1 tablespoon white sugar
  • 1 teaspoon cinnamon
How you make it
  1. Place milk and rice in a medium saucepan, bring over high heat and let cook for 2 minutes
  2. Turn heat down to medium low
  3. Add vanilla, butter, eggnog, trail mix, brown sugar, orange zest and gingerbread spice
  4. Let simmer for 20-30 minutes, stirring often
  5. Once all liquid is absorbed take away from heat and let cool down for 5 minutes
  6. Pour equally in serving bowls and top with cinnamon and white sugar
*I also love to serve it with some cold fruit cocktail on top or even some vanilla ice cream :)
