Healthy Avocado Chicken Salad

Especially now during Christmas time, I am trying to eat healthy. Well, I mean at the normal meals like lunch and dinner, because I eat so many cookies and other sweet treats and don’t want to stop that :)
Gotta keep a balance somehow!
But I also don’t want to starve or miss out on good flavors.

This Avocado Chicken Salad is perfect for that. Full of flavors, tho wonderful for my shape. No worries when I eat the next cookie, because I know, I have some calories good 😛

Served with some fat free tortilla chips or some whole wheat bread, you get all the nutrition you need and a serving size, that won’t leave you unsatisfied :)

Healthy Avocado Chicken Salad 
Recipe type: Dinner
What you need
  • 1 cup chicken stock
  • 2 boneless chicken breasts
  • 1 teaspoon canola oil
  • 1 teaspoon garlic powder
  • ½ onion, finely chopped
  • 1 teaspoon vinegar
  • Pinch of salt
  • 2 tablespoons mayonnaise, fat free
  • 1 teaspoon lemon juice
  • 1 ripe avocado
  • 1 medium tomato
How you make it
  1. In a medium skillet bring chicken stock to a boil
  2. Add chicken breasts and cook from both sides until tender enough to shred (about 8 minutes from each side)
  3. Let chicken cool down a little before shredding
  4. Meanwhile cut avocado and tomatoes in bite sized pieces
  5. In a medium bowl combine avocado, tomato and onion pieces
  6. Add oil, garlic, vinegar, salt, mayonnaise and lemon juice
  7. Stir gently
  8. Shred chicken as finely as you like it (I like it more chunky)
  9. Add chicken, stir gently and let rest for 15 minutes
  10. Serve with bread or tortilla chips
