Now after Christmas all I want is something light, fluffy, fruity - simply everything that is not so heavy and super sweet!

This Coconut Berry Cake is so amazingly easy to make, only a boxed cake would be easier (but we, of course, want to call our baking goods homemade, so no box mix) ;)

Mixed together in minutes, all in one bowl, you won't even have lots of dishes to wash.
The cake is full of flavor, freshness and for sure not dry! No one will be disappointed and even guess, it just took you a couple minutes :)

What you need

1 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1/2 cup milk
1/4 cup shredded coconut
1/2 teaspoon coconut flavoring
1 egg
1/2 cup buttermilk
1 heaping tablespoon cocoa powder
1 teaspoon vanilla extract
1 1/2 cups frozen fruit
1 cup heavy cream
How you make it

  • Preheat your oven to 350 F
  • Line a 8 inch baking pan with parchment paper
  • In a large bowl combine all ingredients besides the fruit and heavy cream
  • Stir until very well combined
  • Pour batter in baking pan
  • Sprinkle frozen fruit on top and bake for 30 minutes
  • Let cool completely
  • Whip heavy cream until really stiff and spread over cake
  • Place in fridge for another hour before serving 
  • Sprinkle with nuts, shaved chocolate or more berries right before serving if you like
