Yes, I know I have said it a hundred times before, I hat using cake box mixes!
But sometimes, I have no time or I am simply lazy!
So happened last weekend and this Walnut and Peach filled Carrot Cake is the result!
I felt so guilty for using a box mix, that I had to shred some carrots, to at least get a little of the “made myself feeling” :)
I also mixed nuts in the peach pie filling, to give it a special something.
The cake is amazing! A wonderful mix between cake and pie, fruity and earthy flavors.
Baked on Sunday, gone on Monday! Since it was such a success, I don’t feel as bad for using a box mix.

Walnut & Peach filled Carrot Cake

What you need
  • 1 box carrot cake mix
  • 1 cup water
  • ⅓ cup oil
  • 2 eggs
  • 1 large carrot, shredded (or two medium ones)
  • 1 can peach pie filling
  • 1 cup grounded walnuts
How you make it
  1. Preheat your oven to 375°F
  2. Line a 9*13 inch baking pan with parchment paper
  3. In a large bowl combine cake mix, water, oil, eggs and carrots until fluffy and smooth
  4. Pour batter into baking pan
  5. In a medium bowl bring together the pie filling and walnuts until very well combined
  6. With a large spoon place the filling evenly over the cake mixture
  7. Bake for 35 - 40 minutes
  8. Let cool for 30 minutes, then place in the fridge for at least 2 hours before serving
