Thanksgiving Oatmeal (Cranberry, Walnut, Caramel)

So I wanted something new for my lunch yesterday and decided to try a cranberry oatmeal. I figured a baked one would fit best. I mixed together some ingredients that I had at home, that I thought would fit good to cranberries and voila my Cranberry Oatmeal with Caramel and Walnuts was ready to eat.
After looking at it and having my first bite, I was blown away. This might actually be the best oatmeal dish I have ever created and it’s for sure not just for breakfast! This is actually worthy of being a Thanksgiving side dish!
I know what I am having on my plate this Thursday 😉
Thanksgiving Oatmeal (Cranberry, Walnut, Caramel)
Recipe type: Breakfast
What you need
  • ⅓ cup old-fashioned oatmeal
  • ⅓ cup quick oats
  • ⅔ cups milk, fat free
  • ⅓ cup water
  • 1 egg white
  • 1 banana, cubed
  • 3 tablespoons cranberry sauce
  • 4 tablespoons dried cranberries
  • 1 teaspoon vanilla extract
  • 2 tablespoons walnuts, for topping, divided
  • 2 tablespoons caramel topping, divided
  • 1 tablespoon dried cranberries, for topping, divided
How you make it
  1. Preheat your oven to 375°F
  2. In a medium bowl bring together oats, milk, water, milk, egg white, cranberry sauce, dried cranberries, banana and vanilla
  3. Stir until well combined
  4. Pour equally into two 6 inch ramekins
  5. Bake for 25 minutes
  6. Let cool for 5 minutes, them top with walnuts, caramel and cranberries
