Yes, on weekends I am lazy and always looking for sweet treats with only a few ingredients, fast to make and still super delicious!
This Pumpkin Cream Pie is such a “weekend pie” … only six ingredients, tho amazing flavors and so satisfying!

This pie is also super healthy and won’t hurt your shape at all (even if you eat two pieces) :)
No added fat, no added sugar.

I spiced it with Primo Pumpkin Butter, because I love their 100% natural and healthy products (and yes, even tho it’s an amazing product, it’s totally affordable)!
Otherwise you can also substitute with pumpkin pie spice.

What you need
  • 1 unbaked pie crust, store bought, fat reduced
  • 1 box instant vanilla pudding mix, fat and sugar free
  • 1½ cups milk, fat free
  • ¾ cups pumpkin puree
  • 4 ounces cool whip, fat or sugar free (you decide)
  • 2 heaping tablespoons pumpkin butter* (or ½ teaspoon pumpkin pie spice)
How you make it
  1. Bake the pie crust according to package directions
  2. Let cool completely before filling
  3. To prepare the filling mix vanilla pudding with 1½ cups milk
  4. When set, mix in pumpkin butter (or spice), pumpkin puree and cool whip
  5. Pour the filling into cooled crust
  6. Place in fridge for at least two hours before serving
Notes
* I used the pumpkin butter from primo specialty foods, because all their products are 100% natural, low in sugar and fat!
