Eggnog Hearts (Christmas Cookies)

I love filled cookies! If it’s some jam, chocolate, eggnog or anything else, I don’t care 😉
Well, this week eggnog made the race and here they are – my Eggnog Hearts.
Wonderful soft and sweet Christmas cookies.
The eggnog is definitely the star of the cookies. The basic cookie is kept pretty simple, so that you really get the full taste of the eggnog!
Now let me tell you the best part: The eggnog filling will built a thin crust, but stay liquid inside. This leads to an amazing texture experience when you have a bite :)

These are cookies you have to store in the fridge!

Eggnog Hearts (Christmas Cookies)
Recipe type: Dessert
What you need
The Cookie:
  • ½ cup butter
  • ¾ cup powdered sugar
  • ¼ teaspoon lemon zest
  • 1 egg
  • 1⅓ cups all-purpose flour
  • ¼ cup cornstarch
  • ⅔ cups almonds, grounded
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
The Filling:
  • 1 cup powdered sugar
  • 2½ tablespoons eggnog
How you make it
  1. In a large bowl combine all cookie ingredients until well combined
  2. Knead the dough for 2 minutes
  3. Cover and place in fridge for one hour
  4. Preheat your oven to 320°F
  5. Line a baking sheet with parchment paper
  6. Roll out the dough about ¼ inch thick
  7. Cut out cookies with a heart-shaped cookie cutter
  8. Place half of the hearts on the baking sheet
  9. Take a small round shaped cookie cutter to make holes in the remaining half of the cookies
  10. Place also on baking sheet and bake for 8 minutes
  11. Let cool completely before filling
  12. In a small bowl mix together powdered sugar and eggnog until smooth
  13. Now brush the cookies without the hole with the eggnog mixture
  14. Place cookies with hole on top
  15. Drizzle some of the eggnog mixture in each hole
  16. Place in fridge until serving (they stay in the fridge the whole time)
