Easy Cranberry Poke Cake (for lazy moments)

Yes, it’s right after Thanksgiving (ok, 4 days later), and I am still feeling very lazy!
So I didn’t really feel like baking and only made this Cranberry Poke Cake for super lazy people 😉

A cake box mix, some cranberry sauce, whipped cream and dried cranberries is pretty much all you need.

I whipped the cream myself, because I like it better than cool whip, but if you feel really lazy, simple skip this step and use store bought whipped cream :)

The cake is super refreshing after all that heavy thanksgiving stuff

What you need
  • 1 box birthday cake mix, sugar free if possible
  • (white or yellow cake mix works just fine too)
  • 1 can cranberry sauce, with whole berries
  • 1 cup dried cranberries
  • 1½ cups heavy cream
  • 2 teaspoons cornstarch
  • 2 teaspoons powdered sugar
How you make it
  1. Prepare the cake according to package directions but with one egg and ⅓ of the oil less!
  2. Once you take the cake out of the oven, let cool only two minutes, then poke holes in it with the end of a wooden spoon
  3. Heat cranberry sauce in the microwave for 1 minute, stir
  4. Pour over cake, spreading out with a big spoon to make sure the holes get filled
  5. Place in fridge for one hour
  6. Now beat the heavy cream on medium speed with an electric mixer for one minute
  7. Add cornstarch and powdered sugar and beat on high speed until very stiff
  8. Spread whipped cream over the cake
  9. Sprinkle dried cranberries on top of the cream and place back in fridge until you serve it
