Coconut Apple Caramel Cheesecake Bars

This is the dessert I made for Thanksgiving, because the original thanksgiving dessert didn’t survive until thanksgiving 😉

These Coconut Apple Caramel Cheesecake Bars totally look like a Christmas treat, even tho I can imagine eating them throughout the whole year.

The golden Streusel topped with the shiny caramel just get me in the Christmas mood, I can’t help.
What can I say about the taste?! I mean we all know that caramel and apple go together very well, and the coconut in the crust and inside the cheesecake part just give it a little special something.
Cake bars to impress, that’s what they are :)

Coconut Apple Caramel Cheesecake Bars
Recipe type: Dessert
What you need
The Crust:
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ½ cup butter
  • ⅓ cup shredded coconut
The Filling:
  • 3 medium apples, peeled and chopped
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon lemon juice
Cheesecake Part:
  • 12 ounces Philadelphia cream cheese, fat reduced
  • ⅓ cup sugar
  • 1 egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • ⅓ cup shredded coconut
Streusel Part:
  • 1 cup all-purpose flour
  • ¾ cups brown sugar
  • ¼ cup butter
  • 1 cup Smucker's caramel topping, sugar free
How you make it
  1. Preheat your oven to 350°F
  2. Line a 8 inch baking pan with parchment paper
  3. In a large bowl combine all crust ingredients with your fingertips until crumbly
  4. Press the crumbles into your baking pan and form an even bottom
  5. Bake for 18 minutes
  6. Meanwhile in a medium bowl bring together all filling ingredients
  7. Stir until apple pieces are evenly covered with cinnamon sugar mixture
  8. In another medium bowl combine all cheesecake part ingredients and mix with an electric mixer until smooth
  9. Now in a large bowl combine all Streusel ingredients until crumbly (again with your fingertips)
  10. Pour cheesecake mixture on pre-baked crust
  11. Place apples on top of cheesecake mixture
  12. Sprinkle with Streusel
  13. Bake for 45 minutes
  14. Let cake cool completely in the fridge
  15. Right before serving drizzle with caramel topping, serve and enjoy :)
