Kids Birthday Cake (Aqua Animals)

One of the easiest and healthiest kids birthday cakes ever! My son loves it, and I gotta admit, I don’t just make it for his birthday, because I love it too 😉
Basically it’s a soda cake bottom topped with some sugar free jam and a nice vanilla pudding frosting.
I guess the only “unhealthy” part about this cake is the little amount of whipped cream in the frosting, but we saved so much on the other cake parts, that we can afford using real heavy cream for that :)
The cake is still low fat and low sugar (don’t worry about using barely sugar, it gets sweetened enough by the jam.
Since my son loves water and surfing, I made him a “surfing animal” cake. You can also let the animals stand on grass and just use green food coloring instead of the blue one.

Kids Birthday Cake (Aqua Animals)

What you need
The Cake:
  • 3 cups all-purpose flour
  • ¼ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
  • 1½ cups diet Fanta (or other orange soda)
The Frosting:
  • ⅔ cups sugar free jam of your choice
  • 1 package vanilla pudding, fat and sugar free
  • 1 cup fat free milk
  • ½ cup heavy cream
  • blue food coloring
  • Animal Cracker
How you make it
  1. Preheat your oven to 350°F
  2. Layer a 9 inch baking pan with parchment paper
  3. In a large bowl combine flour, sugar, baking powder, baking soda and salt
  4. Add Fanta and stir until smooth
  5. Transfer batter into baking pan
  6. Bake for 35-40 minutes (until stick comes out clean)
  7. Let cake cool for a few minutes
  8. Microwave sugar free jam on high for 30 seconds, stir and spread over warm cake
  9. Place in fridge until completely cooled
  10. Beat heavy cream until stiff
  11. Prepare Pudding with only one cup fat free milk
  12. Add whipped cream to pudding
  13. Add food coloring (until it's as blue as you want it) and stir until well combined
  14. Spread over cake (kinda messy, so that it looks like waves)
  15. Right before serving stick some animal cracker on top
