Birthday “Cake” Oatmeal

Saturday was my husbands Birthday. Sine we can’t live even just one day without oatmeal, I made him a Birthday “Cake” Oatmeal for lunch, and boy was he happy and excited about it (you gotta love men, they are so easy to satisfy) :)
Basically it’s a banana peanut butter vanilla oatmeal with some cream cheese on top.
I made myself one too, just without the candle 😉

Sometimes the most simple ideas in life are the best! Could you imagine having oatmeal on your Birthday?
If so, what would your oatmeal base be? Banana and peanut butter or something completely else?

What you need
  • ⅓ cup old-fashioned oatmeal
  • ⅓ cup milk, fat free
  • 1 tablespoon vanilla pudding powder
  • 1 tablespoon vanilla extract
  • ½ package stevia
  • ½ banana, mashed
  • 1 heaping tablespoon peanut butter
  • 2 ounces cream cheese, fat free
  • 1 tablespoon powdered sugar
  • 1 teaspoon sprinkles
  • 1 candle ;)
How you make it
  1. In a microwave safe dish bring together the oats, milk, vanilla pudding powder, vanilla extract, stevia, banana and peanut butter - do not stir
  2. Microwave on high for 1 minute
  3. Stir until well combined
  4. Now microwave the cream cheese on high for 30 seconds
  5. Stir powdered sugar into cream cheese and spread mixture over cooked oatmeal
  6. Drizzle sprinkles on top, stick the candle in it and start singing "happy birthday" while you serve it ;)
