Individual Apple Pies – perfect for a road trip

Today we were going to the zoo!
Like always, I can’t leave the house without food, because I don’t really like all the fast food out there and I don’t even see why I should spend all that money on something, that I can make myself at home way cheaper, more delicious and lighter!
So today I packed us some over-night oatmeal for lunch and those wonderful individual apple pies as a snack.
I just baked them real quick in the morning, because I had some pie dough left in the fridge. Even if you don’t have any dough made already, it’s super quick to do.
I always wrap them in pockets like that, so that my two men don’t get their fingers dirty 😉
For this recipe I can just recommend using Martha Stewarts Favorite Pie Crust, because it’s so fast to make and easy to roll (really nothing can go wrong with that crust).

Individual Apple Pies - perfect for a road trip

What you need
For the Crust:
  • 1¼ cups all-purpose flour
  • 1 stick butter
  • 2 tablespoons ice water
  • ½ teaspoon salt
  • ½ teaspoon sugar
For the Filling: (for 3 pies)
  • 1 apple, peeled and cut into small pieces
  • 2 tablespoons brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • 1 tablespoon butter
How you make it
The Crust:
  1. Mix flour, salt and sugar
  2. Add cold butter and mix fast with your fingertips until it's all crumbly (I just like doing it with my hands, you can also use a food processor)
  3. Add the ice water to it and mix just until combined and the dough sticks together if you press it (again with your fingertips)
  4. Form the dough into a 1 inch flat disk, wrap in plastic and put in the fridge for 1-2 hours
The Filling and finishing the Pies:
  1. Preheat oven to 425°F
  2. Line a cookie sheet with parchment paper
  3. Mix apple pieces with all other ingredients until well coated
  4. Roll out your dough and cut hand-sized pieces out of it
  5. Fill each dough piece with apple pie filling
  6. Cut 1 tablespoon butter into 3 equal pieces and place one piece on each pie filling
  7. Fold together and fix the outside by pressing them together with a fork
  8. Sprinkle with some brown sugar and cinnamon
  9. Place on parchment paper lined cookie sheet and cover lightly with tin foil
  10. Bake for 20 minutes, uncover and bake for additional 5-10 minutes, until crust is browned
  11. Let cool before packing and serving
