Milk Bars (German)

If kids want a sweet snack in Germany, we give them those milk bars. Well, we actually buy them at the store there. I never even had the idea to make them myself. But since I can’t get them in the states, I had to figure out a way, how to bake them, because life without them just doesn’t feel right 😉
So I did some research (browsing the internet and telling my mom to buy some and tell my what ingredients are listed on the package). After three days in the kitchen, trying back and forth, and almost going insane, I had the perfect recipe.
They taste exactly like the store bought ones, just without all the chemicals in it. I am so proud of myself!
Never ever will I go back to buying them. They are a big hit in my family, and they also wouldn’t buy it anymore. Even my son likes those ones better.

Milk Bars (German)
Recipe type: Dessert
What you need
For the Cake:
  • 5 egg yolks
  • 5 egg whites
  • 4 tablespoons water
  • 2 tablespoons oil
  • 1 cup all purpose flour
  • 1 cup confectioners sugar
  • 2 tablespoons cocoa powder
For the Filling:
  • ¾ cups +1½ tablespoons heavy cream, softened
  • 7 ounces fat reduced cream cheese
  • 1 tablespoon honey
  • ¼ teaspoon lemon juice
How you make it
The Cake:
  1. Preheat your oven to 325°F
  2. Layer a 9 inch baking pan with parchment paper
  3. Beat egg whites until stiff
  4. Mix egg yolks and sugar until fluffy
  5. Add water, oil, flour, confectioners sugar and cocoa powder and mix until smooth
  6. Fold in stiff egg whites
  7. Pour mixture into baking pan
  8. Bake for 10-12 minutes
  9. Let cool completely, then cut in half, so that you can fill the middle)
The Filling:
  1. Whip heavy cream until stiff
  2. In a large bowl mix (with an electric mixer) the soft cream cheese, honey and lemon juice
  3. Fold in whipped cream
  4. Now Spread the cheese mixture evenly on one half of the cake, put the other half on top and place in the fridge for about 2 hours (even better over night)
