Cheesy Ground Beef Rice Casserole

Comfort food the not so unhealthy way.
I am addicted to cheese and ground beef, because you can do so much with them. Tho every dish tastes and looks different. Ground beef never gets boring.

So this time, instead of making the standard “I mix ground beef with noodles” casserole, I wanted to have one with rice. Oh and lots of cheese.
For things like that I always use low-fat cheese and the ground beef with the lowest fat amount possible.

I like to eat a lot, but still don’t wanna gain weight. This dish is perfect for it. I promise you, it won’t leave you unsatisfied!

So basically: cheap, fast, cheesy … a Jutta dish!

Cheesy Ground Beef Rice Casserole
Recipe type: Dinner
What you need
  • 1 lbs ground beef (lowest fat amount possible)
  • 2 onions, diced
  • 2 teaspoons garlic powder
  • 1 small can tomato sauce
  • 1 cup cooked rice
  • 1 cup chicken broth
  • 1 cup sour cream (I use fat free)
  • 2 cups shredded cheese
  • salt, pepper, oregano
  • 1 cup frozen peas
How you make it
  1. Preheat oven to 350° F
  2. Spray a skillet with cooking spray and turn on the heat to high
  3. Roast the onions for a few minutes
  4. Add ground beef and garlic, brown the ground beef completely, turn heat to medium
  5. Spice with salt, pepper and oregano how you like it
  6. Add rice, peas tomato sauce, 1 cup cheese and broth, let simmer for 3 minutes
  7. Transfer everything into a casserole dish and bake for 15 minutes
  8. Meanwhile combine the rest of the cheese with the sour cream
  9. After 15 minutes bring the cheese/sour cream mixture on top of you casserole and bake for another 15 minutes

    • Jill, that are about 4-5 serving depending on how many kids eat from it :)

      • So, I added up each ingredient differently, and if you use 2% Mexican Shredded as the cheese, fat free sour cream, Muher Organic Tomato Sauce, Basmati rice, and frozen peas and carrots-
        It will yield 6 cups and it will be 315 calories a cup.

  8. I just made this with Morningstar Griller Crumbles instead of ground beef. I also used plain Greek yogurt, corn instead of peas and added some red pepper seeds. It came out great and I am not usually a big fan of the “fake” meat products. I cooked at my friends and that was what she had on hand, so I thought I would give it a shot. I will be making this again!

    Made this tonight with a mix of wild rice, red rice, white rice, brown rice & quinoa. Left in the peas, but added corn, too. Used organic, grass fed, blah blah meat so it was 85%. Used light sour cream & a mix of freshly grated cheddar & mozzarella. Forgot to add green onions at the end–Man!! Only thing I’ll do differently next time is use my homemade tomato sauce instead of a can of plain–Mine is thicker & has seasonings. Thank you!

  11. Holy cheesy casserole! This is easy AND delicious! I added Montreal Steak seasoning to give it a kick and green onions that someone else suggested. I think I’m more excited for the leftovers! This one is a keeper!

  12. Just made a Mexican variation – sub salsa for the broth. Add a little chopped fresh cilantro if you like it, and a half can of black beans instead of peas. Yum!

    • I did the same (mexican variation with mexican seasonings) but I used zucchini instead of peas because that’s what i had on hand. It was yummy. I’ll do black beans next time. That will make the recipe stretch too.:)

  21. Is there anything I can substitute for tomato sauce? My daughter can’t have tomato based sauces and finding recipes is so hard.

    • Wow that is tricky! My best guess would be trying it with a cheese or garlic pasta sauce, basically any sauce your family likes! The tomato sauce is only there for the taste, so you can really add anything that has almost the same consistency. If you try it, please let me know how you liked it :)

  22. Tried it exactly as the recipe said. It was delicious, but my fiancé and I both agreed that it needed corn instead of peas. I’ll be making this again tonight with corn, and we can’t wait!

  24. Made this the original way first, minus onions, and it was fantastic! Made again tonight with taco seasoned meet and added corn and put on tortillas. Made amazing burritos!!!

  27. I made this last night using ground turkey and frozen mixed veggies and brown rice. Mixed everything in a large skillet and served in fat free soft taco shells… husband and kids begged for more!!!! Thanks for sharing!!!!!

  28. Very good made this tonight. I used cream cheese and corn instead of peas and sour cream and only 1 onion. I loved it! I think nxt time ill mix the cream cheese in as it was a little odd on top. Also I will use more corn and possibly more vegetables. But altogether wonderful! Thank you :-)

  29. Made this with quinoa instead of rice and corn instead of peas. I also threw in a can a green beans (have to trick my husband into eating veggies). My picky husband like it. I took leftovers to my parents and my even pickier dad really liked it!

  30. I made a few changes, but this is a great base recipe!
    I cooked my brown rice using beef stock for extra flavor, I used ground turkey and added a green pepper in with the onion and cooked them first, then took them out and cooked the meat. I used beef stock instead of chicken stock and left over vodka cream sauce. Also added corn and a touch extra cheese in the sour cream and cheese topping. Always looking for ground meat recipes and this one will definitely be a keeper. Next time I will use taco seasoning and salsa for a Mexican feast!!

  32. I just a made this tonight. Everyone loved it. Thanks for the recipe. I used corn instead of peas. I was out of sour cream so I just used the cheese on top and it worked out fine. I also snuck in some eggplant with the ground beef. No one noticed. 😉

  33. Made this last night and it was delicious! My picky 2 year old gobbled it up. I did make a few adjustments because I was missing some ingredients, I used ground turkey instead of beef and it tasted great! And I didn’t have any chicken broth on hand so I substituted for water. Obviously that won’t help the taste, but even without the broth it was still delicious. This was a great Pinterest find!

  35. Just tried this recipe for the first time. Eating it as I type. It turned out wonderful. I used a mixture of ground turkey and lean ground beef. I also cooked my rice with chicken broth for more flavor. I doubled the recipe and shared with my Parents. I wish I had read the suggestions to add green onions on top, that would be great. I have the idea to also add fresh cilantro. I will do that for my left overs tomorrow (can’t wait). I almost used my own marinara sauce, but I decided to save it for deep dish pizza this weekend. It may give it even better flavor, but it isn’t necessary. This recipe goes in the weeknight rotation. Quick, easy, delicious. I look forward to trying this with corn, and taco seasoning, and enchilada sauce as suggested.

    • It’s super easy to make and you won’t have any problems with it :) Since it is so customizable it will taste good whatever you put in it!

  40. I made this in my rice cooker, use cooked ground beef, uncooked rice (and water amount to cook), mix all ingredients together leaving 1/2 of cheese to put on top. Stir all together and add cheese on top, close and cook!! Really a great dish!

  41. This recipe was great! But I changed it a bit. I used olive oil to sauté the onions, used Parmesan cheese, Greek nonfat yougart instead of sour cream and black beans instead of peas. It was great! Will use turkey burger next time!

  42. I just made this because it sounded great for this cool fall night. I didn’t have tomato sauce or chicken broth, but I did have tomato soup…so I used a cup and a half of that in place of the sauce and broth. It turned out great! Just wanted to add this comment as a tip that you can always use your imagination in a pinch!

  44. Made this tonight just used cream cheese instead of sour cream and corn instead of peas. Will definitely add more vegetables next time. Was awesome but quite rich with the cream cheese so will have to try sour cream next time. Wonderful dish though!!!!!

  45. We have been sick, so I thought the tomatoes sauce might be too much for our tummy’s, so I substituted cream of mushroom instead & changed from peas to corn. We will see how it goes over tonight :) Thanks for sharing this
